Wanting something warming at lunch today I toasted under the grill one side of a piece of bread and then lathered the untrusted side with pesto. Chopped a few cherry tomatoes on top, plus a few small mozzarella balls and then grilled until bubbling. Served with some assorted green leaves on the side – simple and delicious.
